Mark Olive is an innovator in his field. As a chef he has developed dishes that use both Indigenous knowledge of fauna and flora, and food preparation that is unique and complements the Australian landscape. This is well illustrated in this clip, where his expertise is clearly evident in his confident presentation. Personalising the sequence with the reference to, and on-screen acknowledgement of, his aunty makes the whole program very intimate, and allows the viewer to feel part of an extended family.
